I admit at the time of writing that i haven rewatched the first episode (shining armor)
but listen to SFX every time Kitts doors are opened/closed..... they 'hssssss' basically phonetic layman's terms for 'depressurise' which basically means the cabin is AIRTIGHT!!!!
Am i barking up the wrong tree here by suggesting Mike and Sarah in ep 1 could have kept at least their oxygen supplies because of this???

Well, if you see the HUD closely (look on around 12:58 if you got in on DVR), the oxigen meter kinda have two tanks on it. I think that's the internal oxygen tanks that KITT have. The cabin was of course airtight. If it wasn't then the flame would have been able to get into the cabin as it would have spread through the oxygen in the cabin. Since KITT was airtight, the flames outside couldn't get to the oxygen inside the car, that's why they were safe. But since the cabin was airtight, they could not get oxygen from outside the car either, so they had to rely on KITT's oxygen tanks. Point is there was air separation between the cabin and the exterior the keeps the flames from going in.

hissing could also mean the doors work with air pressure, maybe thats how kitt will be able to open and close them himself.
