I assume that if both Graiman and the K3000 were captured all hope would be lost and the bad guys win, keeping him and the car separate would make it harder for the bad guys to achieve their goals.
For the second question, I think Graiman had programmed the K3000 that in the event their is invasion of his home by the bad guys the primary objective for the K3000 is to ensure the safety of his daughter.
