Just been looking at some of the trailers and drew up a quick list of my favourite episodes(in order shown)
Trust Doesn't Rust
Goliath
Soul Survivor
Knightmares
Goliath Returns
Knight of the Drones
K.I.T.T. vs K.A.R.R.
Junk Yard Dog
Knight of the Juggernaut
KITTnap
As you can see, they tend to be the ones where KITT is damaged/kidnapped

I'd have to agree with whoever called themselves a sap - I love Junkyard Dog, and Soul Survivor (although more for the Michael-Kitt dialogue than the actual episode, which suffers from terrible 80s visual technobabble).
JYD is damn near perfect, however - it's a destruction episode, but Kitt's fate isn't treated as flimsily as in KOTD/J (they could have scratched Knight of the Drones for me, and made this the season opener); Michael actually demonstrates responsibility/emotion in a very in character style (asking Bonnie how long it will take to 'repair' Kitt, and then saying 'It isn't him', accurately portrays Michael's level of technical knowledge regarding his partner, as well how he takes Kitt for granted as well as Bonnie); the storyline, although rightly subbing Kitt's 'death' and resurrection, is a serious one; there's more backstory; and there is some great dialogue between Michael and Kitt, especially Michael's pep talk about carrying on. Why trivialise what happens to Kitt? In Drones, Michael all but shrugs and goes after Margot, and in Juggernaut, a group of kids rebuild the artificially intelligent supercar!
I also love 'Knight in Disgrace' and 'Lost Knight', but I haven't been able to watch those in a fair while Roll on season three DVD.
