Alexondra Lee could be ok as Dr. Barstow.
Here's my suggestion though, Christina Chambers, she's very sweet and beautiful IMO
She's now in "One life to live" tv-show and also played "Maria Torres" in Sunset Beach tv-serie, which was a bit like Baywatch since it had lifeguards in it as well. Also Sunset Beach was filmed in Seal Beach where scenes from K.I.T.T. vs K.A.R.R. was filmed too
