The truck stop at the start of the episode is the old Castaic Junction Restaurant, located at the intersection of I-5 and Highway 126 in Castaic, CA. It has since been torn down:

Where is the house where the girl lives with her family, and she "deserves a spanking", as KITT says.
Also I don't recall the episode name, but where is that bit restaurant where kitt has the Sloppy Joe? It's the one where the old guy from The Green Mile movie, and the father in 'Babe' plays a big part, and has the 'bug transmitter' put under his wheel of the truck.

Anyway, add the Episode to the Locations list and I'll add this question there.

I've only just seen this, as I'm just about to add some 'Ten Wheel Trouble' locations.

It’s called ‘Hyatt House’ and is located on Pico Canyon Road (or Potrero Canyon Rd as it is labelled on Bing Maps) on the Newhall Film Ranch in Valencia.

The scenes of Michael and KITT chasing Joe were all filmed on Pico Canyon Road - also used as the location in ‘Knight of the Phoenix’ where KITT first talks and they skid to a halt and where Michael falls asleep, passing the police car.

Strangely, the scene that immediately follows the chase, where Michael and KITT cut Joe off, is filmed at opposite ends of Pico Canyon Rd, I have no idea why they did this. it doesn’t make an enormous amount of sense really.

The later scenes, where Michael is driving the truck, followed by KITT, as well as all the later convey scenes during the finale were filmed further along Pico Canyon Rd or Potrero Canyon Rd as it is labelled on Bing Maps, on the Newhall Film Ranch in Valencia. Approximately the exact same location where the police stop Michael in ‘Knight of the Phoenix’ incidentally.
